Celebrate your dog's birthday with this special birthday cake that has coconut oil, blueberries, and almond butter! When my dog is given the choice, he'll choose almond butter over peanut butter every time, and seeing as how it's his special day... here is the recipe for a dog birthday cake without peanut butter.
Preheat the oven to 350°F. Grease and line two 6-inch baking pans.
Process the old-fashioned oats on high until they make fine flour. Add to a large mixing bowl.
Process the walnuts (or almonds) on high until they turn into meal. Add to the oat flour and combine with the baking powder and cinnamon. Coat the blueberries with the dry ingredients.
In a separate bowl, mix together the coconut oil, maple syrup, vanilla extract, and eggs. Make sure the eggs are not cold or the coconut oil will solidify.
Add the wet ingredients to the dry ingredients and stir until just combined. Divide the batter evenly between the two cake pans.
Bake for 25-30 minutes until the cakes are firm to touch and a toothpick comes out clean. Allow to cool in the pans for 10 minutes before transferring to a wire rack to cool completely.
When the cakes are cool, sandwich them together with almond butter, then top with more almond butter.
English walnuts are the regular eating kind. Do not use Black Walnuts as they can be poisonous to dogs. You can also use almonds or simply use almond flour/meal.The coconut oil and eggs need to be at the same temperature. If the oil is too hot, it will cook the eggs. If the eggs are too cold, the oil will solidify.
